Apple Cinnamon Crumble Loaf

A rich and dense apple cake to celebrate Allantide, with Hannah from Three Little Birds Cafe. 

Halloween may be most-celebrated holiday on 31st October, but it's not the only one: Allantide is an old Cornish celebration that marks the beginning of winter with the giving of 'good luck' apples. Hannah from Three Little Birds shares this recipe she makes with her friend's windfall apples, from a recipe by Jane's Patisserie.

Ingredients

For the crumble topping

  • 90 g plain flour

  • 65 g light brown soft sugar

  • 50 g unsalted butter (melted) 

For the cake

  • 225 g unsalted butter

  • 225 g light brown soft sugar

  • 225 g self raising flour

  • 4 medium eggs

  • 1 tsp vanilla extract

  • 2 cooking apples (200g chopped weight)

  • 2 tsp ground cinnamon 

For the cinnamon sugar

  • 50g light brown soft sugar

  • 2 tbsp ground cinnamon 

For the drizzle

  • 50g icing sugar

  • pinch of cinnamon

  • water 

Method

Crumble Topping and Cinnamon Sugar

Pop the flour, sugar and melted butter to a bowl and mix to combine until lumpy - so it resembles crumble topping. Chill in the fridge for now whilst you prepare the cake mixture. 

In a separate small bowl, mix the brown sugar and cinnamon together.

Cake

  1. Preheat the oven to 180ºc/160ºc fan and line a 2lb loaf tin.
  2. Peel and chop the apples into cubes, about 2cm in size.
  3. Add the butter and light soft brown sugar to a bowl and beat until light and fluffy.
  4. Add the flour, eggs, vanilla, and cinnamon and mix until it’s a smooth consistency.
  5. Add the chopped apple and mix through.
  6. Put one third of the cake mix in the lined tin, and sprinkle half of the cinnamon brown sugar mix over the top.
  7. Repeat with another third of cake mix, and the rest of the cinnamon brown sugar.Top with the last third of cake mix.
  8. Get the crumble mixture out of the fridge, and fluff it up slightly with a fork to break it up into smaller pieces, and then sprinkle over the top of the cake
  9. Bake the cake in the oven for 55-65 + minutes, until baked through. If towards the end it's starting to brown too much, cover with foil until baked fully.
  10. Remove from the oven and cool fully in the tin.

Decoration

Mix together the icing sugar, cinnamon and add water 1tsp at a time to reach a drizzle consistency that you like
Drizzle over the cake and serve (with Cornish clotted cream or custard if you wish!)
